Chocolate Fudge Brownies – Makes about 20 peices

Prep time: 10mins Cook time: 65-75mins

  • 2/3 cup cocoa
  • 150g melted butter
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 tsp vanilla essence
  • 2/3 cup flour
  • 1/2 tsp baking powder
  • 1/2 cup dark chocolate chips
  • 1/2 cup chocolate chips of choice (orange, white, milk etc…)

Preheat oven to 150c, and 13 x 9in brownie tray with non-stick baking paper.

Pour the cocoa into the bowl of a stand mixer, then pour the melted butter over the top and beat until smooth and lump-free. Add the eggs, sugar and vanilla, then beat for a good five minutes until creamy. The mixture should transform from dark and grainy to light brown and airy, and the sugar should be mostly dissolved.

Remove the bowl from the mixer, and sift the flour and baking powder over the top, stirring them in until no white streaks remain. Stir in the chocolate chips.

Pour the mixture into the prepared tray and bake for 65-75mins until a skewer inserted comes out with moist crumbs but not wet sloppyness. A shell will form over the brownie, so you cannot tell by eye.

Remove from the oven and allow to cool completely before cutting. Don’t worry if the top cracks, it’s rustic.
